Roasted Cauliflower With Lemon And Parmesan Recipe
½ head cauliflower, cut into florets
30 mL (2 Tbsp) oil
Zest of 1 lemon
Juice of ½ lemon
Salt and pepper to taste
125 mL (½ cup) Parmesan cheese, grated
Preheat the oven to 245ºC (475ºF).
Cut the cauliflower into smallish florets.
Place in a large bowl along with the oil, lemon juice, salt, pepper, and half the grated cheese.
Toss well, making sure to evenly coat the cauliflower.
Spread into a cast iron pan or baking sheet in an even layer.
Roast for 15 - 20 minutes, then stir.
Then stir every 5 minutes or so and pull out of the oven when it is roasted and golden brown.
This should be around 35-40 minutes.
Remove the pan from the oven and sprinkle on the remaining Parmesan.
